For the cold days when I want a hot, tasty and fragrant food, I choose to cook something from Indian cuisine. I chose the same now, when I had a craving for beans in onion sauce. A well-seasoned bean stew with a sweet onion and tomato sauce. Goodness, I let you convince yourself!

Ingredients and preparation for Indian-style onion beans:

  • 1-2 bay leaves
  • 6 cloves
  • 7-8 peppercorns
  • 1 pod of black cardamom
  • 1 small piece of cinnamon
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon ajwain seeds
  • 6 cloves of garlic
  • 2 cm of ginger
  • 5-6 onions
  • 1 teaspoon grated coriander
  • 1 teaspoon full of garam masala
  • 1 teaspoon grated chili or to taste
  • 1/4 teaspoon turmeric
  • 2 large tomatoes
  • 500 g of boiled red beans
  • Salt to taste

In a saucepan I put 2 tablespoons of oil and I added the bay leaf, the stews, the peppercorns, the lightly crushed cardamom pod, the piece of cinnamon, the mustard seeds and the ajwain. I let them toast in hot oil for 30-40 seconds, then I added the garlic and ginger passed through the press. I immediately added the julienned onion and a teaspoon of salt. I cooked the onion well until it almost melted. Be careful, it does not have to be caramelized, but only well cooked and soaked. It took me about 15-18 minutes for the onion to be like that.

Over the onion I added the ground coriander, garam masala, chili and turmeric. I scattered them among the onion pieces, then I added the two armored tomatoes. After a few minutes I put the beans and a cup full of water, I put the lid on and let the food boil for about 25 minutes.

If you want the bean meal to be drier, add less water. If you want a food with a little sauce, as I did, add more hot water during cooking.

At the end, add salt to taste and serve the food with salad, rice, sticks or something else.
