Onions, peppers, carrots are cleaned and washed. Put the tomatoes in hot water and then take out in a bowl with cold water and ice to peel as quickly as possible. Peel the pumpkin, cut long and the core is removed if it has many seeds.
Cut all the vegetables and put them in the pan with a little oil. Add the celery leaves and tomato juice over them. Season with salt and pepper to taste.
When the vegetables have penetrated well, add 2 cups of water and the cleaned potatoes and cut them into suitable cubes.
When the potatoes are cooked, add the fresh thyme sprig and cover for a few minutes.
Serve with finely chopped parsley.
